Mozzarella, Tomato, and Avacado Salad

This year for Thanksgiving was my first year of bringing over some side dishes to my parents, and my boyfriends parents house. I was extremely nervous, as I was hopoing to make something that would be sure to impress. I decided to make a light fresh salad, and this is what I came up with. The mozzarella, tomato and avacado salad was a hit! {Go me!} The recipe is listed below. Give it a try!


Ingredients:

1 avacado
1 container of cherry tomatos
1 block of mozarella cheese
1/3 cup of bazil
2 TBS of parsely
1/4 cup of lemon juice
1/4 cup of EVOO (extra virgin olive oil)
salt & pepper
baguette bread (optional)

Directions:

1. In a large bowl combine the tomatoes, mozzarella, basil and parsley. Set aside.

2. In a small bowl whisk the lemon juice, oil, salt, and pepper. Pour over tomato mixture. Toss to coat.

3. Cover and refrigerate for 1 hour before serving.

4. Just before serving stir in the chopped avocado. Serve with a slotted spoon and bread.
