Obviously, I am having a struggle finding a topic to blog about today... So, I am just going to make one up and show you pictures of FOOD. Everyone loves food, right? Whether we eat it, stare at it, or take pictures of it; it smells, looks and tastes good. I'm actually salivating as we speak. I yi yi!

Making the switch

 I hope everyone had a splendid weekend, I know I sure did! It was mostly full of relaxation time, and time spent cozied up in my bed watching movies........ SNUGGLE SESH! This girl right here knows how to snug! :)

     I recently have made a huge change in my life, in regards to my eating habits. I've never been an unhealthy gal, but I have felt I was not only undereducated about what I was putting in my mouth, but extremely naaive as well. While making the change as a "newbie" vegan, it really has been a cinch! While I spend more time in the kitchen preparing meals, I find that I am understanding more and more about the contents of what I am really eating.
     Veganism is a type of vegetarian diet that excludes meat, eggs, dairy products and all other animal-derived ingredients. Many vegans also do not eat foods that are processed using animal products, such as refined white sugar and some wines. Most vegans also avoid the use of all products tested on animals, as well as animal-derived non-food products, such as leather, fur and wool.Vegan refers to either a person who follows this way of eating, or to the diet itself.    While some might say my switch is looked at as a "fad" or "trend", I don't believe it is for anyone to judge. This decision was based off of nothing more than a personal decision to be an animal activist. My education has also convinced my mama to cut out any animal products too! I am continually receiving text messages or e-mails from her, with recipe ideas or meals she made for the family.

WHITE RUSSIAN







Drink Recipe Ingredients:
1 oz. Smirnoff No. 21 Vodka (25 oz. per bottle)
0.5 oz. Kahlua Coffee Liqueur (25 oz. per bottle)
2 oz. cream   

Pour vodka and coffee liqueur over ice cubes in an old-fashioned glass. 
Fill with light cream and serve.
(For a little extra flavor, replace plain vodka with Vanilla vodka!)

Popeye and Olive Oyl

Since it has been such a nice weekend, I thought it be time for a food post. When it's hot outside, I prefer something light, crisp and chilly! Yesterday evening we had some girls over to our place for dinner, and my task was to make a yummy side dish. Yes, you guessed it. I made a salad :) Here is what I made and the "how to" so you too can make one.

Ingredients:





Add spinach into a large salad or mixing bowl, sprinkle over feta cheese, almonds, and thinly sliced strawberries. Top off by drizzling dressing and ENJOY!

It's obviously a P.M.S kind of night

Yea, you heard me. I am CRAVING dessert. Ooey, gooey, chocolatey, sweet DESSERT. nomnomnom.
I guess due to the time, and that no gourmet restaurants are open at this hour, I'll be taking a trick to the corner gas station to grab some donuts. Oh, the things I settle for!

salivation here I come.



YOU CAN MAKE THEM TOO! Here's how:

Red Velvet Cake Pops

1 box red velvet cake mix (cook as directed on box for 13 X 9 cake)
1 can cream cheese frosting (16 oz.)
1 package chocolate bark (regular or white chocolate)wax paper
1 bag lollipop sticks


1. After cake is cooked and cooled completely, crumble into large bowl.


2. Mix thoroughly with 1 can cream cheese frosting. (It may be easier to use fingers to mix together, but be warned it will get messy.)


3. Roll mixture into quarter size balls and lay on cookie sheet. (Should make 45-50. You can get even more if you use a mini ice cream scooper, but I like to hand roll them.)


4. Chill for several hours. (You can speed this up by putting in the freezer.)


5. Melt chocolate in microwave per directions on package.


6. Roll balls in chocolate and lay on wax paper until firm. (Use a spoon to dip and roll in chocolate and then tap off extra.)I also only melt a few pieces of chocolate bark at a time because it starts to cool and thicken. It's easier to work with when it's hot.


7. use lollipop sticks to insert into the balls and then stick in the fridge or freezer for a little while before you dip in the coating. I also used a Styrofoam block to stick the pops in to dry.

An Easter Dinner Twist

Easter at the Gibb residents this year got reallllll fancy. My mom and I slaved away in the kitchen, and decided to make some gourmet food this year. We branched out from the traditional Easter Dinner and got fancy. And let me tell you... it was T-A-S-T-E-Y


Tomato mozzarella basil salad


Parmesan, walnut & baby bib basket salad
We topped it off with raspberry vinaigrette dressing




Chocolate Dream Pie... and yes, I will be dreaming of this tonight.
